What is Freeze Drying?
Freeze drying, or lyophilization, is a dehydration process used to preserve a perishable material or make the material more convenient for transport. It works by freezing the material and then reducing the surrounding pressure to allow the frozen water in the material to sublimate directly from the solid phase to the gas phase.
What are the primary and secondary drying phases?
During primary drying, the pressure is lowered (vacuum) and heat is added to sublimate the ice. This removes about 95% of the water. Secondary drying increases the temperature further to break physical bonds and remove the remaining unfrozen water molecules.
